The charcoal-gray matte finish of the Commercial Hard-Anodized series not only looks sophisticated but is impressive in performance: it sears meats over medium heat, cooks evenly, and stays stick-resistant without having a nonstick finish that can eventually peel. Moreover, hard-anodized pots and pans are safe to use with metal utensils and under the broiler. Riveted on for strength, the stainless-steel Cool V handles stay cool during stovetop cooking and are oven-safe, as are the lids. p Covering all the basics, this set consists of a 2-1/2-quart covered shallow saucepan; 8-, 10-, and 12-inch open skillets; and 3- and 7-quart covered chef's casseroles. The lid on the larger casserole is domed to send moisture and flavors back into the pot for succulent meat dishes. Calphalon Hard Anodized - NO GO November 29, 2008 P. Orr Worst pans I have ever used! Read everyone's review and advice on how to cook without sticking..no dice. Slow, low heat, everything..and I have been cooking a long time, and never a problem. Everything sticks to these pans, regardless, and does not release when cool. br / br /Back to cast iron. Poor investment, and I regret it every time I have to pull them out of the cupboard. No problem with a set of Cusinart pans I have.
Excellent cookware set November 26, 2008 realmofdefiance (Dawsonville, GA) As long as you know how to cook then this is the cookware set for you. Very little sticking if used on lower heat due to the composition of the pans, they use less heat than normal. If you are getting food sticking then you need to make sure your pans are clean, and lower you heat. I have used calphalon for many years and the this is the best set I own. I do tons of cooking and many delciate dishes these pans are perfect. Like any Calphalon they must be hand wash but any quality cookware is reccomended to be hand washed as well. Clean up is easy, if it does become very dirty then just use a scotch bright and comet comes right off. The best thing of this cookware you can use metal in them and not have to worry about messing up a non stick coating. If you are looking for non stick I would recomend Calphalon non-stick, but these pans don't stick as long as you keep your heat lower than normal and know how to cook properly. I would reccomend this cookware to anyone that is serious about cooking great food!

Very disappointed in these pans, though usable I'm sorry I insinerated the boxes cuz now its a hassle to send them back. Ultra special instructions for how to NOT get stuff to stick to them. Can't put them in the dishwasher. Can't wash them IMMEDIATELY after use. Have to let them cool down. I wouldn't recommend. Keep looking for something that you don't have to let your raw eggs warm to room temperature before putting them in the skillet (otherwise they will most definitely stick).

This is my first set of Calphalon cookware and I'm impressed. There is a learning curve though, you MUST let them warm up slowly and cook on a lower temperature of ALL your food will stick. I see a lot of the bad reviews for this product are people complaining that everything sticks. It only sticks if you treat it like a teflon coated pan. A little butter (I use earth balance) and cooking on a lower temp and nothing sticks! I recommend this as a great quality set for a low price (I paid $139 on memorial day sale), but also look at the Farberware sets. I already had two pieces of Calphalon when this opportunity came available to purchase the 9 piece set. You get the ease of cast iron with the light weight and easy to clean hard-anodized surface. It cooks evenly without burning and I love it.
