Amazon.com Review The hardest working knife in Asian cooking, the Japanese santoku--a cross between a butcher knife and a European chef's knife--splits, chops, dices, and slices meats, vegetables, and fruit. Its 5-inch, blade size is ideal for cooks with smaller hands and detailed chopping tasks, such as mincing garlic or slicing plum tomatoes. Like all santokus, this one has a straight edge for precise chopping and a hollow edge (with fingerprints indentations along the blade edge) that prevents food from sticking to the blade during slicing. p Part of Wuesthof's Classic line of cutlery, this knife has a very traditional design. Its blade is hand-forged from high-carbon steel so it retains its sharp edge longer and is easier to re-sharpen. The blade also includes a stain-resistant alloy, and is ground and polished by computer for perfect tapering from tip to bolster. Durable, super sharp, and easy to use December 1, 2008 M. Hawkins (Detroit) We now own four Wusthof knives. It has worked much better for us to have four excellent, high quality knives than a cheap set of 50 different knives. The santoku is a great all-purpose knife and we are very happy with ours. Be careful not to leave them soaking in dishwater or dirty; wipe them off or clean them immediately to prolong their lifespan. We hope to have these knives for a long time!
This knife is Cajun approved! December 27, 2007 Sara Q. Laviolette (Grand Coteau, LA) My friend's sister bought the 7 inch version of this knife for herself, then bought one for my friend knowing she'd love it. After using her knife, I bought myself the 5 inch version and proceeded to chop vegetables until 1am! I then purchased one for my mom and one for my best friend. One year later, I'm now buying it as a gift for my newlywed friends. So basically, this knife is worth buying not once but six times. br / br /I use it for everything from meat to vegetables. It's definitely my go-to knife. If more than one person is cooking in my kitchen, there's likely to be squabbling about who gets to use this fantastic knife. Everyone else has been extremely happy with their knives. Anyone who has this knife lists it as their favorite.

I am so happy I purchased 3 of these.... I have small hands and finally a knife that fits comfortably and does the job the company claims it does! Its a strong, versitle knife and I'm so pleased with it (all 3 of them) that I will be buying more from the Wustof Classic Collection!

This knife is certainly of high quality and construction, but consider the price. In my experience, I have bought a similar Santoku however mine is a 7" model and I have yet to find any job it really cannot do. I also found it to be the perfect size and balance in my hand. I guarantee these are the ones you're mostly seeing the pros use on TV. br / br /With a 5" model, you may be able to get by chopping small veggies like garlic, but you'll find you won't be able to to a lot of larger jobs such as larger veggies or cutting meat. Plus the price is pretty high (~$70) for one smallish knife.

Ordered this because (per other recommendations) i have smaller hands and thought this knife might work -- and it does, i am making significantly more salads and whatnot because of this little knife. it is as good as some of the better german or japanese ones. recommended, definitely.
