I can't say enough great things about the craftsmanship of the Henckels Twin Professional series. After purchasing their Chef's Knife, we're sold on the entire line. Only one word of caution, there are a number of different Henckels lines. The Professional series provides the best balance and handling ease; something that the other lines don't. Be sure to purchase a wet stone for sharpening! Anything else will wear down these fine cutting instruments too quickly. Chop! Chop!
