The Sears Craftsman of knives July 3, 2008 Stuart I. Yaniger (SF Bay Area) 1 out of 1 found this review helpful
It doesn't have the heft or the feeling of luxury that I get from something like Henkels, but it has a nice, rigid blade, decent balance, comfortable grip, and it cuts nicely. Very easy to keep sharp with a steel. In other words, it is functionally absolutely correct, if not luxurious. For 1/3 the price, I'll skip luxurious. This is my traveling knife for cooking while visiting friends with less-well-equipped kitchens or doing demos (in my home kitchen, I have a mix of Henkels, Wuesthoff, and some Chinese cleavers), and I'll certainly add a few others to my kit. Highly recommended for the price.
Will not hold an edge June 6, 2008 John M. Beaudin (Saint Paul, MN, United States) 3 out of 4 found this review helpful
I had high hopes, but low expectations with this knife. High hopes because it's done well in Cook's Illustrated reviews for years, and it's gotten great reviews on Amazon, but low expectations because I've worked in commercial kitchens with crappy knives for about 8 years now, and this knife is very similar in look and feel to the knives I've used for the last 8 years. I figured I'd give this one a shot and if it didn't work out, well, I'm only out 30 bucks. And it definitely lived up to my expectations- mainly that it will not hold an edge. At all. The knives we use where I currently work are sent out bi-weekly for sharpening. They come back razor sharp, but it only lasts for about 2 days before they get dull again. I knew within the first two hours of using this one that it was not going to work out. The edge started going in the first hour. After two hours, repeated honing did little to bring it back. I honestly don't see why it's gotten such great reviews. I gave it two stars instead of one because I do like the length and width of the blade, as well as the handle. Long, wide blades are difficult to find for some reason. But it goes dull quicker than any other knife I've used. My recommendation? If you're looking for a budget knife, there are better options out there.
