Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Although Global also makes a "heavyweight" line for cooks who prefer hefty knives, its original knives--of which this 8-inch chef's knife is an example--have thinner blades and are lighter than traditional European-style knives. Breaks Easily August 24, 2008 A. Kerr (Seattle, WA USA) Hello. I bought this knife in May 2007. I used it almost daily to cook, it cut vegetables and meats very well and kept its edge. I did sharpen it 2 or 3x though. Unfortunately, I accidentally knocked it off the counter. When I picked it up, it was broken in two pieces between the narrow area between the hilt and the blade. I took excellent care of it... but clearly something is wrong when it breaks in two pieces on its 1st 3foot fall.
Knife broke in two August 22, 2008 Katie Howard Bought the knife less than a year ago. I accidently dropped it on the kitchen floor when I was putting it away and it broke in two. I have never had a knife break in this way. Liked the knife until then although it didn't stay as sharp as I would like. The Global return policy also is confusing and looks like I will not be able to get a replacement.
OMG! I love this knife! August 22, 2008 M. Smith (New York, NY) I don't know too much about cooking - I'm just starting to get into it really. Up until now the knife block that got me through college was a $30 Chefsmate from Target (really, really terrible - won't cut anything!) Even my mother didn't have very good knives so I've never experienced anything like what I experienced today when I sliced into a lemon with my new G2...It just fell apart - without any force....I was shocked. I can't compare this to any of the other gourmet knives - I bought this one because it was supposedly lighter and smaller handled. And hey, the hot industrial design doesn't hurt :) My new favorite piece of equipment in the kitchen...I was going to buy a food processor, but - at least for now - I'm looking forward to doing all my own chopping :)
Global 8-Inch 20cm, excellent August 8, 2008 Pedro J. Cabrales (San Diego, CA USA) This knife is the best. the Global G-2 is light, excellent performance and fit my hand better than other knives. The handle makes holding the knife secured ideal for fast cutting and great control.

After doing a lot of research into knives, I finally decided to go with Global for a new knife to replace a cheap santoku I've been using until I saved up for a proper knife. As a young cook in a moderate-volume fine dining establishment, this knife has been a godsend. The light weight and perfect balance making any rote prepping less tiresome and the sharpness cannot be beat. This knife glides through pretty much anything without any real pressure being used. I'll be looking into other Globals in the future for expanding my collection of work knives. For the time being, it's a great utility knife.
