| Editorial Reviews:
Amazon.com Review Branching out from its already successful cookware line, Anolon's Brunello collection features high-grade materials with substantial weight. This 6-inch boning knife is ideal for de-boning a chicken, filleting a fish, or cutting meat off of any roast with bones. However, the smooth edge feels a little "sticky" when cutting through thicker cuts of meat. Immediate sharpening on a fine steel is recommended before using this boning knife to bring its edge to a sharper and safer angle. p The Brunello Collection knives feature blades forged from high-quality German carbon steel that resists rust and food stains. The stainless steel is ice-hardened for additional strength and longer edge retention. Blades are then polished with glass to produce an edge that is meant to be simultaneously sharp but smoother to the touch. Full tangs and a counter balance cap provide superior balance, while a rounded spine adds more comfort during extended periods of prepping. Beautiful handcrafted wood handles show off a rich grain in variegated shades of light and dark. Their ergonomic shape offers a safe, comfortable grip. p This boning knife comes with a tiny plastic tip to safely cover its point while resting on the cutting board between chopping tasks. A larger plastic sheath is also included to protect the blade during in-drawer storage. Anolon guarantees this cutlery under a lifetime limited warranty and, for proper maintenance, recommends hand washing and immediately drying knives. I--Cristina Vaamonde/I
