This seven-inch santoku knife combines the precision of a Western chef's knife and the power of a Chinese cleaver. It's an essential in most Japanese homes as well as many professional kitchens. I have several Calphalon knives, and this was my first Chicago Cutlery knife. I'd been wanting a Santoku, and Amazon was offering this one on sale, so I went for it. I'm very pleased -- the balance is nice, and it's lightweight. I would definitely consider another knife from this manufacturer.

Very attractive appearance. Not particularly sharp right out of the box, but sharpens beautifully, and once sharpened handles/cuts almost as well as a similar knife from a top of the line name brand that cost almost six times as much on sale. Considering the price a much better value, and one does not have to be especially protective of it because it is not a major investment. I do put mine into the dishwasher with no adverse effect noticed, so long as I give it a few swipes on the sharpener every few uses.

I find this knife to be very useful on a daily basis. It's not the same shape as a traditional Japanese Santoku Knife, but it does what it's supposed to do.

I do suggest to follow the care guidelines, washing it by hand with a soaped cloth, shapring it every few uses, and so on. I also keep my knife stored in a leather case to keep the blade from being damaged.

I've had this knife for several weeks now, having originally purchased it with the Chicago Cutlery Forum knife set (see other review). This knife is the same quality as the other set. It did need to be toned with the toning rod that was included in my Forum set, but after that I've had no problems with it. I can slice extremely thin with this knife, which is impressive considering its size.

The heft and balance is spot-on, giving you the feeling of control you need. The solid construction gives it a nice aesthetic look and obviously goes perfectly with my other knives. I have no need for Henckel or Wusthoff knives after this knife and accompanying set. For the average cook (ie, not Iron Chef!) this knife should fit all your needs.
