Tough polypropylene handles with full, visible tangs and the traditional three rivets distinguish Classic knives from Wuesthof's other cutlery lines. Otherwise Classic knives are identical to other Wuesthof knives, embodying all the virtues that have earned the German manufacturer world renown. The principal parts of a Wuesthof knife--blade, bolster, and tang--are forged from a single piece of high-carbon stainless steel, and the blade is precisely tapered from bolster to tip and from back to hand-honed edge. The blades and beautifully formed bolsters are not as thick as on some knives. As a result, despite their heft, strength, and durability, Wuesthof knives are pleasingly delicate and marvelously balanced in action.p This 7-inch santoku is a Japanese cook's (or chef's) knife, featuring a low-tip style with a broad blade. The cutting edge is minimally curved, so it provides less rocking action than a European-style cook's knife. For straight-down slicing and precise chopping, however, it's superb. I have recently purchased the Wustof 7" Classic Santoku knive and am very pleased with it. It is the best and definetly the sharpest knive that I own. I also have knives from J.A. Henckles and R.H. Forschner and this knife is in a class above those. When stroked against a sharpening steel it even has a different higher pitched sound than the other two mentioned above, suggesting a higher quality knife steel with harder heat treating. The knife even right out of the box would slice ripe tomatoes with amazing ease. It is well balanced and was extreemly sharp right out of the box. Even with normal use it maintains it sharp edge suggestion extreem detail to initial sharpening angles. I would strongly recomend this to anyone that seeking a high quality kitchen knife.

If you don't have a knife fetish yet, this knife will start you on your way. Once you cut with a Wusthof, you'll never want to use anything else. I love this knife for chopping but what I really cherish it for is cutting translucent slices of onion, tomato, and pickle for sandwiches. I can't stand biting into a big chunk of onion. With this knife I slice lots of paper thin slices and interweave them with the other vegetables and meats. And shredding lettuce is a joy with this knife. br / br /I always get rave reviews on my sandwiches and until now, I've never let out the secret - it's those super thin slices of veggies. br / br /I'm not connected to Wusthof in any way although I really wish I was -- maybe I could get the knives at a discount. :) Still, they are worth every penny.

I love to cook and have been doing so with a knife set I've had for years...I finally decided to get one good knife and this one is it! I had no idea cutting things was so easy! It is a good size for me (I am 5'10) as it is not too small for my hands or too big either. It literally falls thru the veggies and meat too- a good all around knife. If you can only afford one knife, this one would be a good choice. Don't deny yourself any longer- the price is worth it.

I love my knives and this is fast becoming a favorite. I wish it were a little larger - I'm used to my larger French Knife. It is also very sharp - cut through my fingernail with little resistance (remember the advice to keep fingers bent toward your palm when chopping?). Although it would not be my choice for an only knife, it would be near the top.
